Grilled Mediterranean vegetables and haricot bean mash Recipe
A nutritious and satiating dinner, haricot beans are widely appreciated continentally, boasting a smooth and buttery texture. They absorb other flavours well and make a unique alternative to pasta or couscous. Haricot beans also contain high levels of ferulic acid, a known antioxidant and a best- friend to your skin!
Grilled Mediterranean vegetables and haricot bean mash
Serves: 2/ Cuisine: Mediterranean
1 red pepper, deseeded and quartered
1 aubergine, sliced lengthways
2 courgette, sliced lengthways
For the mash:
1 can of haricot beans, rinsed
1 garlic clove, roughly chopped
1 vegetable stock cube, with 100ml of boiling water
¼ bunch parsley, roughly chopped
1 lemon, cut into wedges, to serve
You will need:
Heat the grill. Brush the vegetables with oil and arrange them over a grill pan. Grill until lightly browned, turn them over, brush again with oil, then grill until tender.
Meanwhile, put the beans in a small pan with the garlic and stock. Bring to the boil, then simmer, uncovered, for 10 minutes. Mash roughly with a potato masher, adding a little water or more stock if the mash seems too dry.
Divide the veg and mash between 2 plates, drizzle over a dash of olive oil and sprinkle with black pepper and parsley. Add a lemon wedge to each plate and serve.
