Sweet potato jackets with avocado and chilli salsa

Serves: 2/ Cuisine: Mexican

  • 2 sweet potatoes
  • 1 onion, roughly chopped
  • 2 garlic cloves, crushed
  • 1 tsp. paprika
  • 1 can chopped tomatoes
  • 1 avocado, chopped
  • 1 red chilli, finely sliced
  • ¼ bunch coriander, roughly chopped
  • 1 can of mixed beans, drained
  • 1 lime, cut into wedges

You will need:

  • Olive oil
  • Salt
  • Pepper
  • Coconut yogurt, to serve (optional)


  • Pierce the potato skins 6 to 7 times and place on microwaveable dish for 5-8 minutes rotating throughout. To check that it is cooked ensure that the potato is soft throughout by poking a hole through with a toothpick. It should pass through to the centre with ease. 
  • Meanwhile, heat 1 tbsp. of oil in a frying pan and cook the onion for between 5 minutes on a low to medium heat stirring frequently.
  • Add the garlic and paprika and stir for 1 minute. Add the tomatoes, then bring to a gentle simmer, season well with salt and pepper and leave for 10 minutes occasionally stirring. Add beans and cook for another 5 minutes.
  • To make the salsa, combine the avocado, chilli and coriander in a small bowl. Mix well and season with juice from one lemon wedge.
  • Halve each potato, spoon over the beans and the salsa. Add a dollop of coconut yogurt if using and serve.
