Sweet potato jackets with avocado and chilli salsa Recipe

Sweet potato jackets with avocado and chilli salsa
Serves: 2/ Cuisine: Mexican
2 sweet potatoes
1 onion, roughly chopped
2 garlic cloves, crushed
1 tsp. paprika
1 can chopped tomatoes
1 avocado, chopped
1 red chilli, finely sliced
¼ bunch coriander, roughly chopped
1 can of mixed beans, drained
1 lime, cut into wedges

Coconut yogurt, to serve (optional)
Pierce the potato skins 6 to 7 times and place on microwaveable dish for 5-8 minutes rotating throughout. To check that it is cooked ensure that the potato is soft throughout by poking a hole through with a toothpick. It should pass through to the centre with ease.
Meanwhile, heat 1 tbsp. of oil in a frying pan and cook the onion for between 5 minutes on a low to medium heat stirring frequently.
Add the garlic and paprika and stir for 1 minute. Add the tomatoes, then bring to a gentle simmer, season well with salt and pepper and leave for 10 minutes occasionally stirring. Add beans and cook for another 5 minutes.
To make the salsa, combine the avocado, chilli and coriander in a small bowl. Mix well and season with juice from one lemon wedge.
Halve each potato, spoon over the beans and the salsa. Add a dollop of coconut yogurt if using and serve.
